Spring Salad with Roasted Asparagus and Radishes

Ingredients

  • 1 pound asparagus
  • 1 bunch radishes
  • 1 tablespoon lemon infused or regular olive oil
  • 1 finely chopped green garlic (or more to your taste)
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon salt
  • ⅛ teaspoon fine grind black pepper
  • 8 cups of spring mix (use any combination of radish tops/spinach/sorrel or any other greens you have on hand)
  • 4 Tablespoons apple cider
  • Vinegar base dressing of your choice
  • ¼ cup shaved Parmesan

Instructions

  1. Preheat oven to 375 degrees. While oven preheats, wash and trim asparagus into 1-inch pieces. Wash and quarter radishes. Place vegetables into baking dish.
  2. In baking dish, drizzle vegetables with olive oil and toss to coat. Sprinkle seasonings over vegetables, then toss to coat again.
  3. Roast vegetables for 12 to 14 minutes. Remove from oven and cool slightly.
  4. Meanwhile, toss spring mix with 2 tablespoons of dressing. Add the remaining 2 tablespoons if desired.
  5. Top dressed greens with roasted vegetables. Sprinkle with Parmesan and serve.
