Creamy Mustard Greens and Mushroom Risotto

Ingredients

  • 1 tbsp olive oil
  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 cup chopped mustard greens
  • 1 cup sliced mushrooms
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the Arborio rice to the pan. Stir constantly for 2 minutes until the rice is slightly toasted.
  3. Slowly add 1 cup of vegetable broth to the rice. Stir until the broth is almost fully absorbed.
  4. Repeat the process with the remaining broth, adding 1 cup at a time and stirring frequently.
  5. After the last cup of broth is added, stir in the mustard greens and mushrooms. Cook for 5 minutes until the greens are wilted and the mushrooms are soft.
  6. Remove the pan from heat. Stir in the Parmesan cheese, butter, salt, and pepper until the risotto is creamy.
