Mustard Greens Pesto Pasta

Ingredients

  • 8 oz pasta
  • 2 cups mustard greens, packed
  • ½ cup walnuts
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic
  • ½ cup olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
  3. While the pasta cooks, combine mustard greens, walnuts, Parmesan, and garlic in a food processor.
  4. Pulse until finely chopped, then slowly add olive oil while the processor runs until the mixture is smooth.
  5. Season the pesto with salt ½ cup of the cooking water.
  6. Return the pasta to the pot and mix in the pesto, adding reserved pasta water a little at a time to loosen the sauce if necessary.
  7. Serve immediately, garnished with extra Parmesan and walnuts if desired.
